"Rocket Fast" Banana Walnut Muffin for One in 5 Minutes - REALLY!

Sometimes you feel like you need a hit of something sweet.  Maybe you're having a cup of tea and just want a little something to go with it.  This was my predicament today.

Feeling especially lazy on a Saturday, I just couldn't bring myself to gear up into full baking mode.  Besides, who am I kidding?  I know fully well that one muffin could easily turn into two and sadly, even three (head hung in shame here).  The only sensible thing to do was to make a single lonely muffin to feed the need!

So, not only is this recipe perfect for your own personal coffee klatch moment, it's also great for your kids who may want a little after school treat.

A real banana walnut muffin in about 5 minutes?  Oh, yeaaaah.  You just watch!

Here's what you'll need:
                                 DRY
                            3 T flour
                            2 T sugar
                            1 T walnut pieces
                            1/4 t baking powder
                            Pinch of salt and baking soda each

                            WET
                            2 T mashed, very ripe banana
                            1 T milk
                            1 T butter, melted (~10 seconds in the micro)
                            1/4 t vanilla
  • Except for walnuts, mix dry ingredients in a small bowl.
  • Add the wet list ingredients and walnuts.
  • Mix together until it's batter consistency.
  • Spray a 3" to 4" diameter ramekin with non-stick spray.
  • Place batter in ramekin.
  • Microwave for about 1 minute 40 seconds on high.
  • Let rest 30 seconds before inverting.

Such a cute little quick treat just for little ol' you!

Helpful Hint:
Mix your dry ingredients in individual little baggies and when you have ripe bananas, mash and separate into 2 T portions, wrap in cling film and store in freezer until needed.  When you're hankering for a muffin, voila!  Grab a baggie of your dry stuff and your banana, add remaining ingredients.  Wow!  An even super amped fast muffin!
