Best Ever Blueberry Buttermilk Pancakes

It's summer and the berries are plentiful.  I picked up a load of blueberries yesterday that were so plump and juicy, they begged to be made into something delicious.  I love eating them as is but they are also wonderful in so many recipes.

One of my hands down favourites is blueberry buttermilk pancakes.  Fluffy, melt in your mouth tastiness with the explosion of sweet and juicy blueberries.  Serve them with maple syrup and the contrast of perfectly cooked bacon (click here), and you'll think you've died and gone to breakfast heaven!

Here's what you'll need:
                           For 6 pancakes:
                           1 C all purpose flour
                           1 C buttermilk
                                 (or, 1/2 C plain yogurt and 1/2 C milk*)
                           1 C blueberries (more for garnish if you wish)
                           2 T butter, melted
                           2 T sugar
                           1 1/8 t baking powder
                           1/4 baking soda
                           1 egg

(*May need 1/4 C extra milk to thin batter - see video)
