Linguine with Clam Sauce

Who doesn't love pasta?  So versatile and satisfying, it's no wonder Italians have enjoyed this staple on practically a daily basis for centuries.  Fortunately, this classic has become our own and is ubiquitous in pantries around the world.
 
Did you know that the shape of the pasta actually corresponds to what you're going to be putting on it?  For example, orrechiete, or "little ear" pasta have a cup like structure that fills with ingredients such as crumbled sausage, garlic and rapini (now that's another post!)
 
I love this particular recipe and I don't know why I haven't make it in years.  It has al dente linguine, ripe roma tomatoes, tons of garlic, fruity olive oil - already you've got to love it!
 
Pair it with a nice crisp white wine and some crusty garlic bread for an uber satisfying and affordable dinner!
 
Here's what you'll need:
 
                       1 can clams, 142 gms
                       6 large roma tomatoes, chopped
                       3 large garlic cloves, sliced
                       2/3 C white wine
                       1-1/2 T dried oregano
                       1/2 t dried chili peppers
                       Salt and Pepper
                       Italian parsley, about 1/2 C chopped
                       Parmesan cheese (Not shown)
                       Linguine pasta for 2

When I do the wrap up at the end, I mention basil. 
Ignore that.  There is NO basil in this dish.
I meant to say oregano but was intoxicated
by the delicious aroma of garlic, tomatoes and wine!
