Peanut Butter-Butterscotch Pecan Oatmeal Treats

There are a whole lot of recipes out there for no-cook "cookies".  In my opinion, they are not cookies.  They may look like cookies but they definitely don't have that familiar bite or chewiness of the much loved snack.
 
 
So let's call this one as it really is.  It's a treat, people.  Plain and simple.  And they're delicious!  The great thing about these fab morsels is that they're made completely without flour.  Use margarine and they're vegan!
 
 
Try my spin on these scrumptious treats, especially when you need something sweet
and fast !
                       1 C sugar
                       1/2 C peanut butter
                       2.5 C large flake oatmeal
                       1/4 C butterscotch chips
                       1/4 C chopped pecans (optional)
                       1/4 C butter or margarine
                       1/4 C milk
                       2 t vanilla
Put the sugar, butter and milk into a pot.
Bring to a rapid boil for about a minute.
Watch it carefully!
This is what it looks like when completely melted & blended.
Add the peanut butter, oats, vanilla and nuts, if using. 
Stir until incorporated.
Let cool 5 minutes.
  Stir chips through.
Drop by generously rounded tablespoons onto waxed paper.
Flatten them down with the back of a spoon,
fork or your palm of your hand.
My treats are about 2 inches in diameter.
Let them cool and harden.
About 10 minutes in the freezer if you want them stat!
Yum!
