Flourless Almond Coconut Pancakes for One

Here is a recipe for one for Flourless Almond Coconut Pancakes that is really delicious!  Just cause you're one person doesn't mean you don't deserve to eat something yummy besides the usual grind.

Perhaps, single person, you've had a sleepover guest (wink, wink).  Just double the recipe!

The recipe below will make four, 4 inch pancakes. 

Here's what you'll need for your little old self:


                   1/2 C ground almonds
                   1/4 C plus 1 T flaked unsweetened coconut
                   1 T sugar
                   1/2 t baking powder
                   1/8 t salt
                   1 egg
                   1/4 C water
                   Butter (not shown)

                   Toppings (not shown):
                   Maple Syrup
                   Fresh berries
Mix all the dry ingredients into a small bowl.
Beat egg with water.
Add egg mixture into dry ingredients.
Combine thoroughly.

Melt 2 tablespoons of butter onto a 350 degree griddle.
Pour 2 heaping tablespoons of batter for each pancake.
Spread batter so diameter of each pancake is about 4 inches.

Cook for a few minutes, lift the edge to check for browning.
Flip when the bottoms look like the ones in the picture.
(These have already been flipped.)

Serve with fresh berries and maple syrup!
