Brigitte's Buffalo Wings

Buffalo is our American neighbour being about 1.5 hours from Toronto.  Famous for fires and snow, it is also the birth place of the Buffalo Wing.  Today, we've had one of the worst snow storms in Toronto in recent memory so as an homage to our sister city south of the border, I thought wings for dinner would be fitting!  Here is what you'll need...



Wings, flour, Frank's hot sauce,
butter, salt and pepper.

2 pounds wings, split into drums and flats
(tips off).

For the sauce: 
1 C Frank's Red Hot, 1/4 C butter

 
1/4 t black pepper, 1/2 C flour, 1 t salt.

In a large bowl, add flour, salt and pepper.
Mix well.

This is why the bowl needs to be large -
you'll be tossing all those wings in the flour!

The reason I lightly coat the wings in flour is so that when you drop them in hot oil, you wont get scalded!

Add cooking oil in a large deep skillet, about 1/2 inch deep.  Heat on med-high.  It's hot enough for frying when bubbles form around your wooden spoon handle.

Your first test wing should have bubbles around it like this. 
Add more wings in the pan.
Don't overcrowd.
You may have to fry them in 2 batches,
keep the first ones warm in a 300 degree oven.

Turn each batch over
when they look golden like this!
This is not a time thing, it's an eye thing.
I hate soggy wings where the skin is not crisped and golden like this.




Keeping the wings warm while I make fries. 
I used 2 Yukon golds.
Like the wings,
I used the remaining flour to toss the fries
so they wouldn't spatter.
I used the same oil that I did for the wings.

The fab fries briefly drain on paper towels
while I finish the wings.

Melt the butter in a large pot.
Add the hot sauce. 
Mix well.

Add the wings to the sauce and toss slightly.

Place tight fitting lid on the pot. 
While holding tightly,
shake vigorously up and down
about 10 to 12 times. 
Check if they need a little more pot shaking. 

And here they are... 
Perfect Buffalo wings and fries!
If there wasn't so much snow outside,
I would have gone to buy carrots,
celery & blue cheese sauce
for the traditional side to these yummy babies!

Of course, does it LOOK like someone's missing
the veggie accompaniment?
I THINK NOT!  YUUUM!
