Seduction Pizza

My husband and I have a theory that if you serve someone bacon on the first dinner date at your home, it's a done deal.  Unfortunately, if you cannot partake of the pig due to religious reasons, vegetarianism or just plain dislike of the swine, you're on your own!

This creative pizza with a melange of crisp salty bacon, creamy pungent gorgonzola, sweet caramelized onions, buttery pine nuts and an unexpected hit of fresh chopped mint, is a winner.

I wish I could remember where I first saw this recipe 30 years ago.  However, I've made it so many times, it feels like my own.  I hope you will make it YOUR own this Valentine's.  Even if there's no one to share the 14th with, love YOURSELF and make this unbelievable pizza combo which will promise to send you into gustatory delerium!

You will need...

  • 2 Greek style pita
  • 8 strips bacon (preferably applewood smoked), cut into 1 inch pieces, cooked crisp
  • 1 red onion, cut into thin slices, caramelized
  • .116 gms of gorgonzola cheese (about 1 C, crumbled)
  • 4 T pine nuts, toasted
  • 1/2 C chopped mint


Toasting the pinenuts...
Spread pinenuts in single layer. 
Toast for 30 minutes at 300 degrees.
They should look golden like this.


How to caramelize the onion...
Peel and cut the ends off a red onion.
With flat side down, cut into thin slices.



Here is your mound o' sliced onions!

In a skillet, pour 2 T olive oil.
On lower heat (4 on my stove), stir the onions.
Don't crank up the heat! 
You want them to caramelize, not burn.
Slow cooking will enhance the sweetness of the onion.

Getting there...
While the onions are cooking, prepare the bacon.


Cooking the bacon...

Fry bacon on medium low.
Never fry bacon on high! 
It will go beserk - shrivel and shrink.
Please treat your bacon responsibly!

Drain on paper towel.

You can prepare everything in advance.
By the way, see how deep brown, not burned, the onions are.


A perfect pizza base: Greek style pitas.

Personal pizza, sans pan.
However, do place 2 pitas on an ungreased
cookie sheet for assembly.

Divide the onion between two pita pizza bases.
Sprinkle each with equal amounts of pine nuts.

Divide bacon between the two...

Sprinkle equally with mint...

Divide cheese equally.
Best to keep it in the fridge until ready to use.
It's a soft cheese so if it gets warm,
it's harder to drop the chunks on top.
Place in a pre-heated 350 degree oven for 15 minutes
