1 1/2 C all purpose flour
1/2 C wheat germ
1/2 C unsweetened coconut flakes
1/4 C sugar
1 t baking soda
1/2 t salt
1/4 t ground ginger
Wet Ingredients:
2 bananas, mashed (riper is better!)
1/3 C crushed pineapple, drained
1/4 C canola oil
In a large bowl, combine oil, sugar and bananas.
Add all the dry ingredients EXCEPT coconut.
It will feel very thick but don't worry!
Fold in the coconut and pineapple.
It will still feel dense. Make sure everything is incorported.
Spread into a greased standard sized loaf pan.
Sprinkle with extra coconut.
Bake at 350 degrees for about 45 minutes.
Just out of the oven - golden lusciousness!
Sliced, you can see the pineapple and coconut!
Coconut Honey Butter:
Mix equal parts of butter, honey and coconut oil, that's it!
(Coconut oil comes in a jar as a solid)
