4 ingredient 3 dollar lunch for the Brain Dead

You know the expression, "there's no such thing as a free lunch"?  Although that might be true, there is such a thing as a three dollar lunch!

Feeding yourself cheaply and well is not a paradox.  This combo is not only budget friendly, but also high in protein - enough to keep you satisfied through your work day until you get home for dinner.

So easy to make - just a couple of minutes of chopping and the opening of 2 cans.  No high tech culinary skills required!

This makes 2 cups.

Here's what you'll need:
                                     1 can tuna (170)
                                     1 can mixed beans(398 ml/14 oz),
                                     drained and rinsed
                                     1/4 C chopped green pimento olives
                                     1/4 C chopped parsley
                                     (not shown as it was an after thought!)
                                      2 T olive oil
                                      1/8 t cayenne pepper (optional)

Add tuna, beans, olives and oil.
 Mix in parsley, a few grindings of black pepper
and cayenne if using.
 Best served chilled,

loaded with protein, fibre, and taste!

  1. Looks very tasty. It reminds me of something my mother used to make, she added, cubed fresh tomatoe and chopped green onions. Keep it coming, everything is delicious.
