Beans are nutritious and cheap for a quick and budget friendly meal. Go off grid from the usual kidney or black beans and try butter beans. They are as smooth and silky as they sound!
This is so simple to pull together for an easy dinner. It should serve 2 if you add a salad and some crusty bread. If you like, throw on some extra protein like I did.
Not every meal has to be a fancy. Choose the simplicity of everyday ingredients to make something satisfying and tasty!
Here's what you'll need:
1 can butter beans, drained and rinsed
1 generous 1/2 C baby carrots
1/2 small onion
1 celery stick
(1 used 2 smaller pieces to = 1 large)
1 t paprika
1 t salt
olive oil
Oven at 350 degrees.
Here is a picture of the can of beans.
Put the carrot, onion, celery in a processor.
Process until it looks like this.
OK. I was sooo brain dead today,
I forgot to take a picture of the next step:
In a pan, fry the veg mix in 2 T olive oil
on medium high heat until soft, about 5 minutes.
To the veg mix, add beans, 2 more T olive oil,
salt, paprika and 3/4 C of water.

Pour into a pan.
Pop into the oven for 1/2 an hour.
Ready!
Eat on its own for a vegetarian meal...
Add protein like I did for something more substantial.
I topped it with grilled chorizo sausage.
Beans.
Gotta love them for their versatility and ease on your budget.
Make this and you can say, "Bean there, done that."
