Easy Peach Crisp (for Two) for the Brain Dead

Sometimes you need a really easy dessert to cap off dinner.  What better combo than a warm, not too sweet, peach crumble topped off with a scoop of cold creamy ice cream!  (Insert salivation here.)

Other than measuring stuff into a bowl and opening a can, the degree of difficulty is looow - i.e., brain dead worthy.  Treat yourself to this simple to make, yummy, fruity, traditional favourite.

This recipe is perfect for 2 people or, if you're a single person, a great après dinner sweet just for little ol' you for two nights in a row!

Here's what you'll need:
                                 1 can sliced peaches, drained (398 ml)
                                 2 T flour
                                 2 T large flaked oatmeal
                                 2 T brown sugar, packed
                                 2 T cold butter
                                 1/2 t cinnamon
                                                                                             
                                 2 - 6 to 8 oz butter greased ramekins.
 

                                 Heat oven to 350 degrees F. 
Stir together flour, oats, sugar and cinnamon. 
Chop butter into small pieces.  Add to flour blend.
Pinch through with your fingers 
until it turns into a crumbly  mix. 
Something like this.
 Sprinkle 1 T of the mix into the bottom of each ramekin.
 Evenly divide peach slices between the two ramekins.
 Top peaches in each ramekin with the flour oat mix, equally.
Place on a cookie sheet.
Bake 30 minutes until brown & bubbly.
Scoop up some quality ice cream as the crowning glory!
Silky peaches... buttery cinammony crumble... 
with the goodness of oats.
