Quinoa Salad with Pomegranate, Fennel & Mandarin Orange

This fabulous salad is composed of so many healthful ingredients!  With only two tablespoons of oil, it's low fat as well!

I had a bulb of fennel and a pomegranate in my fridge that I needed to use up.  Fennel and orange are also a great natural combination so that was an easy add in to make this yummy dish. 

This salad is a melange of so many "super foods"!  Take a look...

Quinoa:
high in protein and fibre
Mandarins:
high in vitamin C, flavonoids, beta carotene, lutein
Pomegranate:
fibre and phytochemicals
Fennel:
digestive, vitamin C, folate, potassium and fibre
Parsley:
mild diuretic and has phytochemicals

Don't you just feel better reading about it?
Just imagine how you'll feel after eating it!

Here's what you'll need:

                           2 C cooked quinoa
                      1 C very thinly sliced fennel
                      1/2 C finely chopped Italian parsley
                      1/2 C pomegranate seeds*
                      1 284 ml can mandarin oranges (drained)
                      2 T canola oil
                      1 T + 1 t lemon juice
                      Salt and pepper to taste

Put everything into a large bowl.
 
Mix together thoroughly.
Add salt and pepper to your taste.
 Make sure you chill before eating.
 
Serve it up!
Bursting with colour, nutrients and taste!
