Currant Scones for 2!

Here we are on a Sunday afternoon, lounging away the day.  What a perfect time to sit with a cup of tea and a treat.  Scones seem like the "civilized" accompaniment to tea, especially for any "Downton Abbey" fans (i.e. - us!). 

How perfect are scones?  Not too sweet, these traditional English yummies are wonderful with an assortment of toppings to suit your personal taste.

Although there are many recipes for fancier versions, this one is for basic scones which provides a nice foundation for anything you want to add. 

They are sooo easy to make and are perfect for an afternoon "Tea for Two".

Here's what you'll need:
                               1 1/4 C flour
                               1/2 T baking powder
                               1/4 t salt
                               1/4 C butter cut into small cubes
                               2 T granulated sugar
                               1/3 C milk
                               1/4 C currants

                              Optional topping:
                              1 T cream
                              1 T coarse sugar

                              Oven 425 F
In a medium bowl, mix flour, baking powder and salt.
 
Add butter pieces. 
Cut butter into flour mixture.
These pastry blenders are great for this.
 
It should look like coarse meal.
 
Add currants and sugar.  Mix through.
 
Add milk. 
Blend with a fork until it comes together into a ball...
 ...and pulls away from the bowl like this.
 
Roll out onto a cookie sheet.  No greasing required!
I used the bottom of a spring form pan.
It should be about 7" in diameter and about a 1/2" thick.
 
I used my handy pizza cutter to score into four pieces.
 
If using, glaze top with cream or milk.
Sprinkle with coarse sugar.
If you don't have coarse sugar, regular will do.
Some people glaze with egg for a shiny surface.

Spread apart the pieces with your pizza cutter or knife.
About a quarter inch of space will do.
Bake for 20 minutes until...
 
...it's golden brown like this.
 
Warm currant scones...
Add your favourite toppings.
I couldn't decide so I went for it all!
Butter, lemon curd, raspberry jam and marmalade!
Make a pot of tea and enjoy these easy to make scones now!
